The cover does not change the seat height, because it goes over the foam you already have. KTM gives the 2025 85 SX seat height as 33.3 inches (845 mm) on the 17/14 and 34.3 inches (871 mm) on the 19/16. That is the KTM 85SX seat height you start with.
